Why we close on Mondays

People sometimes try the door on a Monday and peer in at the dark room, so it seems worth explaining.

A restaurant this small runs on the same six pairs of hands every night. Monday is when those hands make pasta for the week, when the floors get the scrub the health inspector dreams about, and when our chef gets to eat somebody else’s cooking for a change.

We think you can taste a rested kitchen. Come Tuesday, and tell us if we’re wrong.
